Today we spoke with Ryan Gaul. He is a Sous Chef here at Southpark, and we want you to know a little bit more about him.
He was born in Idaho but grew up in Spokane, Washington. His favorite ingredient to cook with is pork. His favorite sport is skateboarding, something he has been doing since he was 10 years old! His favorite thing about Portland is how it is a small town disguised as a big city. He loves how there is a lot going on and has that city feel to it, but he also like how you can escape to neighborhoods and feel like you are in a small town. He has been working in some form of the food industry for most of his life, and has been a chef for over 10 years. His favorite music to listen to while preparing food is heavy metal, because it gets him pumped up. Something interesting that you might not know about Ryan is that he worked with serial killer Robert Lee Yates in Spokane! They both worked for a cell phone tower company, and Robert Lee Yates drove the forklift.

Here at Southpark we consider ourselves one big family. To give you a little more insight about who our family consists of, here are some facts about our head chef Broc Willis. 
Broc is originally from San Antonio, Texas. He has been a chef here at Southpark for five years, and in the restaurant industry for 17 years! His favorite part about his job is being able to play with food, and experiment with different ingredients and flavors. His favorite ingredient to cook with is fish, and his favorite kind of fish to prepare is bocaccio, which is a type of rockfish. He loves a lot of the dishes at Southpark, but two of his favorites are the gazpacho and the smoked salmon. He is expanding his wine pallet and does enjoy the taste of a soft red, but considers himself to be more of a beer drinker. He enjoys the Maharaja IPA and the C-Note IPA from right here in Portland. When Broc is out of the kitchen you can find him spending time with his three children.

Our Butcher’s Selection is a dish we are really proud of. We’ve developed relationships with local farmers and ranchers and are now regularly being delivered whole hogs and other produce by the farmers themselves. We have nightly specials featuring house butchered, local, and naturally raised meats. One farm we love doing business with is called Singing Pig Farm, and they often provide us with our delicious Butcher’s Selection. Using locally raised pork products is a great way to support our community, and it’s also sustainable because of its proximity to Portland. We are proud of what we serve, and hope you are too!

We are part of the Portland community, and we cherish that dearly. We strive to provide you with a wide array of delicious options and take pride in what we prepare. We specialize in delicious, freshly caught seafood, and locally raised pork.  If wine is your thing, we have a fantastic wine bar that has local and international selections. We love craft beer, and have a wide range of locally brewed beers on tap.
